ginger squash
50 grams grated ginger (more if you like it fiery)
150 grams sugar
1 lemon
cover the ginger and sugar with boiling water and leave overnight
add juice of lemon
strain ( I leave some of the ginger in though)
and bottle
ring the changes with
elderflowers
lime instead of lemon
cream of tartaric
blackberry
3 of blackberries
3 of sugar
3 of water
whizz blackberries and leave to drip in a jelly bag
next day boil up the sugar and the water with 4 cloves and 2 cinnamon sticks bottle
elderberry
(make sure you give this one a good boiling to stop the stuff from fermenting ......although if it did )
2 kgs berries
10 cloves
cover with water and bring to a rolling boil then simmer for 25 mins
give a good whizz with the stickblender and jellybag
for very 100ml add
100 grams sugar
if you are going to do a mix just mix the berries at this stage
to very 100 mls |

| I freeze my cordials in the handy size water bottles ever since I lost a batch of elderflower a few years ago . I hope you enjoy them as much as we do !! |
