serves 4-6
225g chopped pitted dates
290ml tea
110g butter
170g caster sugar
3 eggs
225g self raising sifted flour
i teaspoon bicarbonate of soda
i teaspoon vanilla essennce
1 teaspoon strong coffee(can use camp coffee)
preheat oven to 180 c
soak dates in tea for 15 mins or so
oil 6 dario or pudding molds then line with oiled greaseproof paper
cream together the butter and sugar until pale
beat in the eggs gradually then fold in the sifted flour
add the bicarb, vanilla essence, coffee to date/tea mixture then fold into cake mix
spoon into molds and bake in oven for 1-1 1/2 hours or until a skewer inserted into the centre comes out clean.
Turn out onto plate and serve with butterscotch and coffee sauce or real vanilla ice cream made with vanilla pods such as carte d'or or ben n jerrys!!
to make a butterscotch and coffee sauce to go with ....
110g butter
55g demera
2 tablespoons double cream
1 tablespoon camp coffee
place in saucepan,stirring until melted
bring to boil and allow to thicken... |

| make this all the time at work though at work i usually steam them rather than put them through the oven....this is the best recipe i have found for these and is so popular at my hotel that when its not on the sweet menu we get requests for it...lol |

believe me when this comes out of the steamer it is lighter than a fairys fart-its not very heavy in the slightest though it can be very sweet!!!!!
especially with the coffee and butterscotch sauce...mind its very very scrummy!!
