In my vegibox this week were some courgettes I tried boiling them the other week with leeks but what do others do with them?
Help! they will go in the compost bin if don't use them!! lol! |

Ratatouille ?
Tinned tomatoes , onions, peppers, aubergines, mushrooms and garlic/herbs cook about 30 mins freezes well
or just cut into chunks and have roast veg same ingredients as above except fresh toms ! drizzle with olive oil roast about 45 mins

| I make my own sweet and sour pork sometimes and throw in the usual as well as courgettes, probably ends up not being the proper sweet and sour pork dish, but it tastes good anyway!!! :lol: |

| courgettes are also good in a stir fry cut into julienne and cooked with onion and prawns |

I saute sliced courgettes with mushrooms and leeks. A nice accompainment for something like gammon steak or pork chops
