Wedges SeasoningWe often have potato wedges, I cut each potato into 8 and shallow fry for a few minutes then put into a big roasting pan and cook in the oven. It's the nearest I ever get to chips, I usually sprinkle them with basil, salt and pepper, but Sam (son) was in charge of dinner tonight and he came up with this to sprinkle over them :-
1 teaspoon Paprika (Hungarian not Spanish)
1 teaspoon Garam masala
1/4 teaspoon chilli powder
1/4 teaspoon ground black pepper
1/2 teaspoon salt
Cook wedges as above till nicely browned, turn onto kitchen paper and pat off excess fat, put into bowl,add seasoning, shake, return to oven for 5 mins.
