spicy lentil diphad this last night with hummus with crudites and toasted garlic pittas (bliss)
125 g red lentils
400mls water
25g butter or marg
1large finely chopped onion
1 or 2 tblsp curry powder (dep on your taste)
2 cloves garlic or ( less dep on you)
s and p
bring lentils to the boil
simmer until tender mash with a fork meanwhile
fry the onions and garlic untyil transluscent add curry powder cook off and then add lentils
s and p to taste
serve with chopped coriander (if you have any)
if you want a smoother texture just blitz
