Pork, Onions, garlic and apricot

I made this today, not from a recipe, just from my head.

Sorry, no exact quantities.

1 large pack of pork shoulder to saute (leaner might have been nicer)
2 onions
1 whole bulb of garlic, crushed
small tin of drained, sliced mushrooms
10 moist, dried apricots
2 tbsp olive oil
1 small pot of natural yoghurt
paprika, cumin, celery salt, small cayenne pepper, cinnaman
(sorry I just sprinkle in what I think, and am only careful with the cayenne)


Gently fry onion, garlic in the olive oil, after 5 mins add mushrooms and fry for a little longer.  Remove to a largeish ovenproof dish.  Fry pork until browned all over, mix in with the onion mixture and seasoning.  Add halved apricots and 50 mls of water.
Cover with foil and cook in a medium oven for 1 hr 15 mins, stirring once during cooking.  Just before serving, stir in the yoghurt.  This should provide enough sauce along with the juices released in cooking.
I served it with couscous....Mark chose the spicy one, not one I would have chosen as it matched the seasoning in the pork too much.
Lovely....and there was enough for us to have more another day.

I have loads of pork chops in the freezer so I might make something similar to this next week... or even tomorrow!  Am loving cous cous at the moment...  q9

Agree Jo, it sounds nice. But cous cous-yuck!

We like cous-cous and I love the idea of a whole bulb of garlic plus all the other spices.
