Pork casserole with pears, cider and ginger.

Hmm, this is my recipe, I haven't checked to see if it exists on the net.
Inspired by the book I am reading, World without end.



4 spare rib Pork chops (browned quickly)
1 medium onion (browned slightly)
6 ripe pears (peeled and sliced)
Cider (2-3 cups)
small piece of ginger, finely chopped.
salt and pepper to season


Peel and slice the pears, put to one side. Peel and slice the onions, cook in a little olive oil until beginning to brown.  Place half in the bottom of a heavy based casserole and keep half for later.
Brown your chops quickly, just to seal.  Place 2 on top of the onions, add ginger, season, and remaining onions and place the other two chops on top.
Cover with the sliced pears, and then the cider. (I may have been heavy handed with the cider q5 )
Cover and cook in a medium hot oven for 2 hours, uncovering for the last 30 mins, to brown the pears slightly.

Serve with veg of your choice.

(We haven't eaten this yet, so hoping my recipe is good)

Yum....and with the final 2 chops, I'll reduce the liquid and add creme fraiche.  Too much liquid but tasted good.

Yummmm, even better today with a reduced liquid sauce.

This time served with mash and stir fried veg in chilli oil.

Will definitely be making it again, maybe with apples.
