No flour chocolate cake

This was in the Daily Mail and is a lovely moist choccy cake.

225g butter
175g caster sugar
6 eggs - seperated
175g plain chocolate - melted
175g ground almonds
2tbsp Gran Marnier, brandy, amaretto, or other liqueur of your choice ***

Preheat oven to 180C, 160C for fan oven.  Gas Mark 4.

Beat together butter and sugar until it is light and creamy.  Gradually add the egg yolks, beating well after each one is added.  Stir in the melted chocolate, ground almonds and chosen liqueur.

In a seperate bowl, whisk the egg whites until the form soft peaks.  Fold in one third to the chocolate mixture to loosen then gently fold in the rest.

Pour into a 22cm loose bottomed, greased and floured cake tin.  Bake for about 35 minutes, until the cake is just firm in the centre and a skewer comes out clean when inserted in the middle.

Let stand for about 30 minutes, dust with icing sugar and serve warm with cream or icecream.

If making ahead of time you can warm through by placing in a low oven 140C/120C gas Mark 1-2, for about 20 minutes.

***  Liquers.   You can use water or a fruit juice if you do not want to use alcohol.

This is nice for a dinner party served with a boozy fruit  of the same flavour as liqueur used and cream or ice cream.
