KARENS "EXQUISITE" SMOKED SALMON SNOW PEA RISOTIOThis was passed on from a friend in Oz and its now one of our favourites. Had this for dinner tonight.
Ingredients:
Handful snow peas (mange tout)
2 tablespoons butter
1 small onion finely chopped
1 cup arborio rice
1.5 cups continental chicken stock
1/2 cups water
2 tablespoons sour cream (or creme fraiche)
100g smoked salmon pieces
shaved parmesan cheese
Method:
1. Blanch snow peas and set aside
2. In a medium saucepan, melt butter and gently fry onion until soft. Add rice and stir over the heat for 2 minutes.
3. Add stock and water, bring to the boil. Cover and cook on a mediurri heat for 17 minutes, until the.stock is absorbed. Stir in sour cream.
4. Stir in smoked salmon and snow peas -served topped with shaved parmesan cheese and...
