Jacket Sweet Potatoes!

Here is my very complicated recipe for a jacket sweet potato! haha
I find having a jacket sweet potato makes a delicious change to having a normal jacket potato.  Sweet potatoes have tons more vitamins that normal potatoes and they count towards one of your five a day, unlike normal potatoes.  

Great for diet junkies!

Ingredients
Sweet Potato
Filling

Method

Whack your sweet potato in the microwave for 9 minutes and voila!  If you want to retain some vitamins you can do it in the oven.  Pre-boil then stick in oven for about half hour.

Then slice down the middle and add your filling.

I recommend cottage cheese - delicious (and low fat!)
Baked beans are fantastic as well.
You can pretty much stick in there whatever you want.

I never find it works too well, Emma. I love sweet potatoes, but when I bake them they're very wet. I ususally do about 5 or 6 mins in the microwave, and then crisp the skin by putting it in the oven for about 5 mins, but have never really been too impressed at the result. Any ideas?

I just do mine in the microwave.  I don't get crispy skins, but they have never come out wet.

Our microwave is a bit dodgy though so maybe it just dries them out or something.

I have never had the patience to do them in the oven.  I have no idea you know!
