Herbs - go with?

I'm rubbish at working out what herbs go with what, I kind of know rosemary goes with lamb but that's about it... so here's a list of the fresh herbs I have, what can I do with them, what do they go with?

Parsley
Rosemary
Thyme
Oregano
Garlic Chives
Mint
Bay Leaves

And is there another herb I should be growing, I keep forgetting to get basil, is there something else I'm forgetting?? :D

goes with new potatoes (chopped up and tossed with butter); put a little bit in the water when warming peas;

Also an essential ingrediant at Pim's O'clock for PIMS ........................

Also good for "dressing" things

OREGANO
Always use in pasta dishes and especially on garlic bread! Chopped up very finely.

BAYLEAVES
Use them in all types of casseroles, but remember to take them out - need 3 or 4 in a casserole for 3 people. I work on the basis - 1 for each person + one cos that is the size of my dishes.

PARSELY (Recipe tip here as well)
Boil potatoes - toss in a mixture of Buotoni Parmesan cheese and chopped parsley then roast (make sure they are well coated) - lovely. Any left over are fine heated the next evening. Great for a nibble at a party as well.

Mint sauce for lamb q8 q8 make your own (mint sauce, not lamb)

Mint in new pots yes.

Parsley sauce for fish...yum, make your own again.
Parsley to garnish

Oregano......I don't use it much, find it too heavy...but prob nice in garlic bread and pasta. I tend to put lots of basil in pasta or pasta sauce.

I really must get some basil, when I have some money I am taking a trip to the garden centre with my wicked step mother and getting some planters and some flowers/more herbs! q3

I grew some dill for the first time this year, it's great with fish and it's a very pretty feathery plant. It's also nice in a mixed herb salad.
