Gluten Free Crumble Mix

I have a friend who is a Coeliac and he visits for dinner regularly, so I've started to devise some easy stuff that we can all eat together, this was one of the early ones:-

4oz Buckwheat Flour
4oz Rice Flour
4oz Butter
2 - 3 oz Soft Brown Sugar (or up to 4oz if you've a very sweet tooth)

Rub is as a usual crumble mix.

I would put into my usual crumble about 2oz rolled oats, but being a true Coeliac he can't tolerate those either so when I first made this mix my son thought I'd ran out of oats. . .

It has a slightly gritty texture (the rice flour does that), but with a nice jug of custard you don't notice it.

You could make up a big batch and just store it in a conatiner in the fridge, then it's ready at a moments notice.

Thanks for that. I'm wheat intolerant, so usually do the oats "trick". But as I always have a variety of other flours in the cupboard, then this is useful to know. I have to have my custard made with soya though (intolerant to dairy too!)
