Filo pastry and spanakopitaFelt really proud of myself last night! Used filo pastry for the first time ever - and brushed it with beaten egg (a la Rosemary Conley) instead of melted butter - and created a lovely spanakopita with spinach, feta, cottage cheese, parmeson, onions, garlic, egg and nutmeg. Just finishing off the last slice for my lunch!
