4 eggs
2lb spinach
Few spoonfuls of grated cheese
Cheese sauce
Soft boil the eggs for 5 mins.Rinse immediately, peel and put back into cold water. (Alternatively poach the eggs)
Wash spinach, removing any tough stalks, and cook simply in the water it is holding it its leaves. (Covered bowl in micro is easiest)
Arrange spinach in either a large ovenproof dish, or 4 individual. arrange eggs on spinach, then top with cheese sauce, followed by grated cheddar.
Bake in a pre-heated oven 220-230/425-450, gas 7-8 for 10 minutes, or brown under the grill.
