We too have the drooling boxer syndrome-great, isn't it!?
8oz plain white flour
2oz icing sugar
4oz block marg., cut into peices
3 medium eggs, beaten
6oz fine brown/caster sugar
6oz chipped mixed nuts
6oz dessicated coconut
6 oz chocolate, grated
Grease a large swiss roll tin,13x10inces. Preheat oven to cool (150c, 300f gas 2)
Sift flour and caster sugar into a large mixing bowl. Rub in marg until the mixture resmbles damp breadcrumbs. Press the muiture evenly into the tin.
In a clean mixing bowl, whisk the eggs and sugar until thick and creamy, then fold in nuts, coconut and grated chocolate. Spread this evenly over the base.
Bake for about 40 minutes. Allow to cool in the tin for about 25 mins, then cut into bars before completely cold, or the topping will crack.
Store in an airtight tin for up to 7 days, or freeze for up to 3 months.
Lovely served on its own, or with cream/ice cream. The nuts can be substituted by cherries, which is also lovely.

I am definitely going to try those - but I have to go to the supermarket, first - as I have eaten the chocolate, the nuts and used up the eggs, since posting the ingredients......tut tut.
I will let you know how long they will last once cooked........yum!! :kermit:

Not very long, if the fans here are anything to go by! Although with those quantities you get a fair amount. I made some this morning-the smell is soooo delicious when baking!
