Chicken and chips?

So I'm having chicken and chips for dinner tonight, it's something that won't effect my IBS as I'm off out this evening...

But... I'd like to do something with the chicken so it's not so plain and boring, I have herbs/spices etc... in the cupboards and preferably not too garlicy otherwise I'll have no chance pulling! :lol:

Have you got some single cream?
Have you got some Tarragon?
Gently cook the chicken in some butter, lift out when cooked and then add 2 or 3 tablespoons of cream and some tarragon (if you have dried tarragon, soak it for an our in a little milk) Mix it all quickly over a gentle heat and pour over the chicken. Use any other herb, to make a creamy sauce.....but tarragon tastes nice.

No don't have tarragon or single cream, typical!!! I can't be bothered to go to the shop either... :lol:

why not gently soften some butter,mix in some herbs-whatever you have available-then open up the chicken making almost like a little pocket,spoon the herb butter inside then cook in oven till done and you could have like a chicken kiev but without the breadcrumbs on the outside!!
simple but effective and if you have any bacon you could even wrap the chicken in that just to finish it off nicely!!!

hows that for an idea??

You're wonderful sparkles, I have all that stuff including the bacon!! What herbs do you think will work best, I have fresh rosemary, oregano, thyme, garlic chives and mint! Or I have the usual dried ones...

Oooo can't wait for dinner now coz that sounds nice! :D

id probs go for the oregano,garlic chives and thyme as they will go with it beautifully....

Yummy, that sounds good. Hope it tastes as good as it sounds.

We're having that meatballs recipe that Telboy posted.

Well I opted for thyme and garlic, wrapped the chicken in bacon and it's cooking right now...

Will experiment more now I have some fresh herbs, I keep forgetting I have them!
