Cheese and Potato Pie (school meals)I worked for a short time in school meals in the late '80's When I say short time - it was 12 weeks
It was in the days when schools had kitchens and cooks and they cooked food from scratch, not just opened a packet from the freezer and dropped them in the fryer
I have to admit I was impressed by the quality of the meals produced, but all that has changed now, anyway one of the things regularly on the menu was Cheese and Potato pie - the children loved it.
As usual I have no quantities
Potatoes, peeled ready for boiling
Cheese, a nice strong cheddar
1 onion, fairly finely chopped
splash of oil
Butter, salt
I would suggest use 3 times the amount of potatoes you would use for ordinary mash with dinner.
Boil the potatoes in salted water, while they are cooking chop the onion and fry in the oil till nicely browned.
Drain potatoes and mash, add enough grated cheddar to be able to taste it, probably around 6 - 8oz for 2 people. Add to the mash and mix in well. Add the browned onions and a knob of butter, mix well and check cheesy taste. Put into a casserole or similar, smooth the surface and top with more grated cheese.
Into the oven for about half an hour gas 5/6 elec 200c till cheese on top is nicely browned.
Goes very well with baked beans.

We were served this back in July, when we stayed with our friends in North Devon, along with lots of lovely sausages (so not as cheap as just the pie) and beans. Lovely comfort food...will remember to buy the very expensive and hard to come buy Strong Cheddar when I do next months shopping.
