Butterbean Mash

"Butterbean Mash
For 2-3 hungry people:

1 tbsp olive oil
1 (white) onion, chopped
2  400g tins Butterbeans, drained
75g strong cheddar cheese, grated (or more if you like it cheesy) a knob of butter (optional)

Heat the oil in a saucepan then fry the onion gently until soft - about 5 mins.  Add the butterbeans and cook for 2 - 3 mins, stirring.  Add the cheese and butter (if using) and stir until the cheese and butter have melted then blitz with one of those stick blender thingys (but if you dont have one then a potato masher works well) until all is smooth.  Stir (so that it doesnt catch) until hot then serve.  

Yum!

Sounds like it would do as an alternative to refried beans for tortillas.
