Basic Pasta Sauce - with options

You may have noticed I'm a whizz with a tin of tomatoes  q3  q3

For a nice easy low calorie store cupboard lunch

For 2 people

1 x 14oz tin peeled plum tomatoes (or you can use chopped)
a couple of cloves of garlic
splash of oil
a good amount of basil
pepper

4 - 6oz of your favourite pasta

Quite finely chop the garlic but dont crush, lightly fry in the oil, be careful not to brown as garlic burns very easily, pour in the juice from the tomatoes, roughly chop the whole tomatoes and add, add  basil and pepper, simmer till reduced, check seasoning and adjust if necessary. The sauce will take about as long to reduce enough as the pasta takes to cook so once the sauce is simmering you can put the pasta on.
You can serve the pasta plain with the sauce in the middle as a dollop - a la English syle spag bol, or mix the sauce into the pasta and serve Italian style. Either way serve with grated parmesan.

Options to make it a little more substantial

Pepper
1 red pepper, chopped and fried lightly in the oil before the garlic, then continue as above. Or onion or both.

Bacon
Cut 4 rashers of bacon into slices and fry seperately, then add to the reduced sauce.

Salami
Cube about 4 - 6 slices and add to the reduced sauce
