Banana Bread

Got this cooking in the oven at the mo. Wish me luck! Smells good if anything. Here's the recipe from Annabel Karmel's Favourite Family Recipes book:

Best-ever Banana Bread

This banana bread is wonderfully moist and is great for breakfast or lunchboxes. You can also wrap slices in plastic wrap and freeze in plastic freezer bags.

Makes 8 slices

100g (4oz) butter
100g (4oz) brown sugar
1 egg
450g (1lb) bananas, mashed
45ml (3 tbsp) natural yoghurt
5ml (1 tsp) vanilla essence
225g (8oz) plain flour
1 teaspoon bicarbonate of soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
100g (4oz) raisins
40g (1 1/2 oz) chopped pecans or walnuts (optional)

Pre-heat oven to 180 degrees C/350 degrees F/Gas 4 and grease and line a 22 x 11 x 7 cm (8 1/2 x 4 1/4 x 2 3/4 in) loaf tin. Beat the butter and sugar together until creamy then add the egg and continue to beat until smooth. Add the mashed bananas, yoghurt and vanilla essence.

Sift together the flour, bicarbonate of soda, cinnamon and salt and beat gradually into the banana mixture. Finally, stir in the raisins and chopped nuts (if using). Bake for 1 hour or until a cocktail stick inserted in the centre comes out clean.

I haven't used raisins, nuts or salt as Charis doesn't like raisins and I daren't put nuts in in case of choking. I've run out of salt.

It smells absolutely gorgeous and has risen lovely. Just be my luck if I can't get it out the tin :lol:

I also realised I was using vanilla extract, so used a teeny bit. Smells divine. :)

I'm so chuffed, it was yummy, not bad for a novice :lol: We couldn't wait for it to cool down so we ate it with ice cream. Delicious. And I even took a photo to show on here :lol:

Oh I'm really glad! It does smell delicious, doesn't it? It's a great way to use up bananas if you happen to have lots hanging around that is :lol:

I've just made this too, it smells lovely... nearly ready now! Going to take it to work for my lunch this week, might even make another one next weekend if it's as nice as everyone has said! :D
