Manta Ray a l'Anglaise

Applesauce cakeI used to love "The Waltons" and Applesauce cake was Johnboy's favourite, so years ago I found a recipie and it is lovely.
8oz SR flour, or plain + a teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
6oz soft brown sugar
4oz butter
3 eggs beaten
4oz raisins
4oz chopped walnuts
8oz apple sauce (some nice cookers cooked to a pulp is fine)
I'm going to get a bit vague now. . . . sorry.
I have no instructions in my cookery book other than the recipie and the word "cream".
So cream the fat and sugar together, add the eggs and the flour + spices, stir in raisins and walnuts and finally fold in the apple sauce, it fits nicely into a deep 9" round greased tin and cook on a moderate cake baking heat, I'd use probably gas mark 4 max and cook till . . . dare I say it? till done - cake should be springy on top and leaving the edges of the tin. Sorry again, I never time anything and although this is a lovely cake I haven't made it for ages, mostly because I have a problem with cake. . . well if it's there it needs eating doesn't it. . . .
