I just love cooked strawberries thickened with cornflour - hot or cold with cream or icecream. Yum.
I went one step further - Strawberry crumble.
Measuring isn't my scene, so this is approx weights, so add a little imagination -
Some Organic strawberries (taste better)
Spoonful of Cornflour
4oz plain flour
2oz margarine (I use Flora)
4oz Light Demera sugar
Put strawberries in saucepan with a little water and bring to boil. Put cornflour into cup and mix with a little cold water. Pour into strawberries, stirring so it does not go lumpy, and not too thick but not too thin either, and bring to boil for a short while. Take off cooker and pour into caserole (or similar) dish. Let cool for about 10 mins.
Rub together the flour and margarine like breadcrumbs, stir in the Demera sugar. Sprinkle over the strawberries evenly and pat round the edges and in the middle.
Put into a hot oven and cook until firm and golden brown on top. I guess about 180 degrees electric, no idea for gas.
Serve hot with thick double cream or Mackies icecream.
Alternatively you can add crushed weetbix and less plain flour and chopped pecan nuts to the crumble.

| I think this is one I might have to try tomorrow, we have some strawberries in the fridge and some low fat ice cream in the freezer which tastes gorgeous and will go lovely with it! |

Probably about 30-40 minutes Carole. Just judge by how it looks, and you'll be ok.
