Soupe aux Pois Cassés Verts

500 g dried split Green Peas (I find the ones sold in the net bags near the veg to be cheaper than the ones in the cardboard boxes sold on the aisles next to the rice, check to make sure which one is cheaper for you.)
2 litres water
4-5 peeled or scrubbed carrots grated or chunked (if you have a stick blender or want to purée it somehow, you can leave them whole)
2 medium onions, chopped
4 cloves of garlic, smashed or minced
either a smoked ham hock or two (jarreton fumé) or some cubed ham (Lidl does packages of cubed ham shoulder) I use about 500 g
2-4 tablespoons of Butter (or be boring and fat-free and leave it out)
1/4 teaspoon or more of ground Cayenne pepper
Vegetable stock cubes to taste (I use Knorr Méditerranéenne)
Salt and pepper to taste

In a large stockpot, put the split peas in the water, cover, bring to a boil, allow to boil uncovered for 3 minutes, remove from heat, recover and allow to sit for an hour.
Put back on the heat and dump the rest of the ingredients in (except for the salt) with the split peas and water, cover and allow to simmer gently for 40 mins or until the split peas are tender. Adjust the seasonings, adding perhaps more vegetable stock cubes and/or salt.
If you used the ham hocks, take those out, remove the meat from the bones, chop the meat up and add back in.  
Blend or liquify, if desired.
Serves at least 8.  Add a bit more water to make it go further.

It's one of our favourites. But, I have to stock up with dried green peas when we're back home in Scotland. The preference in Devon is for yellow peas....and just can't bring myself to use them. q4

I'd bought the bag of green peas some weeks ago, so was pleased to see a recipe come up on another forum for me to use them.

It was really lovely and I had to hold back from making it a 2nd meal tonight  q5

Making this again, but have had to improvise slightly. It being Sunday, and therefore, no shops to buy what i haven't already got!

So, I had 2 carrots, so have added in 2 cooking type apples.  No cayenne so used one of my hot purple peppers!!

No ham in the same quantity, so use half lardons, cooked down to release the sat fat, and a few bits of sliced (bloody good ham!!) to make nearly the quantity.

Looking forward to seeing how it tastes.

I'm hungry and it is still an hour away  q12
