I've now made, a couple of times, something similar to shepherds pie, but using pulses instead.
So, kidney beans, haricot beans and some red lentils, plus onions, garlic, carrots, herbs and marmite for some strong flavour. Soak and cook all the legumes as directed, or use tinned. Someone advised me the other day that frequent changes of water and rinsing is a good way to help with the flatulance risk.
Gently fry the finely sliced onions, garlic and carrot....mix all the ingredients together and top with mashed potato...a la shepherds/cottage pie.
Serve with some fresh veg and some strong flavoured gravy..it's yummy.
