Risotto with Pink Beans, Roasted Garlic and Mushrooms


6 cloves garlic, unpeeled 6
4 1/2 tbsps olive oil 65 mL
4 cups vegetable broth 1 L
1 1/4 cups dry white wine 300 mL
1 cup pearl barley 250 mL
1 1/2 cups drained cooked pink, red or kidney beans, rinsed 375 mL
1/2 cup chopped onion 125 mL
1/2 cup grated Parmesan cheese 125 mL
2 cups sliced mushrooms 500 mL
1/3 cup slivered fresh basil 75 mL
1/4 tsp freshly ground pepper 1 mL
  salt

   * Preheat the oven to 400° F (200°C). Place the garlic cloves on a small sheet of foil, drizzle with 1/2 tbsp of the olive oil and wrap loosely. Roast in the preheated oven for about 30 minutes or until the garlic feels soft when the skin is pierced with a sharp knifepoint.
   * Sauté mushrooms and onions in 2 tbsp of olive oil.
   * Meanwhile, combine the broth and wine in a saucepan and heat gently.
   * Heat the remaining 2 tbsp of olive oil over medium to medium-high heat in a large, heavy saucepan. Add the barley and cook, stirring until the grains are golden and coated with oil, about 2 minutes. Ladle all but about 1/2 cup of the broth/wine mixture over the barley. Simmer uncovered, stirring every 4 to 5 minutes, until the barley is swollen, almost tender, and creamy, but still is slightly firm to the bite, about 20 minutes. Stir in the beans and remaining broth and heat through, about 2 minutes.
   * Squeeze the roasted garlic out of its skins and mash with a fork. Stir it into the risotto along with the cheese. Fold in the mushrooms and basil and season with pepper and salt to taste. If the risotto has absorbed all of its liquid, stir in a bit more hot broth or water. It should be neither soupy nor firm, but somewhere in between.
   * Serve the risotto in shallow soup bowls.

Yield: 3 to 4 servings
