I can't remember where I found this, I think it was in a low GI book I had a while ago. The rice pudding is lovely though, easy to make and low GI!! I use semi skimmed milk and vanilla extract and it tastes the same.

Ingredients
750ml (1.25 pints) Skimmed Milk
120g (4oz) Basmati Rice
Sweetener equivalent to 60g (2oz) Sugar (6 heaped dessert spoons)
1 tsp Vanilla Essence
1/4 tsp Ground Cinnamon (or Cardamon)

Method

1. Bring milk and rice to the boil.
2. Reduce heat to low, stir, cover and cook for 30 minutes.
3. Stir in sweetener, vanilla essence and cinnamon.
