This is a very easy and popular pudding.

1 x 12oz can of pineapple pieces or slices in natural juice.
12oz sugar
1pt whipping cream

Drain the juice from the pineapple into a saucepan, add the sugar and heat slowly till it has dissolved, then bring to the boil and boil for a couple of minutes, remove from heat. Put the pineapple into a blender or liquidizer, add the syrup and turn the machine on till it is all liquidized. Allow it to cool. Whip the cream to soft peaks, fold in the pineapple mixture, mix thoroughly, pour into a nice bowl or a 1 litre ice cream container. Freeze. If you use a bowl it's best to cover the top with cling film.
When you want to serve it remove from the freezer about 20 minutes or so before to allow it to "ease" as it will be hard frozen.

Ideal-I use a lot of pineapple, so any recipes including it are always gratefully received!

I made this the other day using Blackcurrants........... q9

I was invited to pick some surplus by a friend who has several bushes. I used 3lbs Blackcurrants
1 1/2 pints water
36oz sugar
3pints whipping/double cream

Simmer the blackcurrants gently in the water till soft, push through a sieve (I used a baby mouli then a sieve) You can not bother with the sieve but the seeds in blackcurrants are a bit of a bind.
Add the sugar stir till dissolved and then bring up to boil, boil for a few minutes. Be careful not to overboil as blackcurrants are rich in pectin and you could have the whole lot setting on you....... Allow to cool, stirring frequently. Whip the cream to soft peaks, fold into cool blackcurrant mixture, freeze. I froze mine in 1 litre ice cream containers it made 5 litres.

5 litres is a great amount to get from that amount of fruit. Well done!
