I am reading Driving Over Lemons, Chris Stewart...again and have been reminded of this dish we used to have in Spain. I made it a few times in Devon, and have made it again today.
2 coffee sized cups of olive oil
1 whole head of garlic
Several potatoes, chopped into coarse chunks
2 onion, chopped into coarse chunks
4 peppers mixed or several small peppers. (I deseed, the Spanish peasant in the book doesn't) cut into quarters, or whole if small.
Get a deep frying pan or wok, heat the oil, throw in the onions, followed by the garlic cloves (unpeeled as this keeps them sweet). Follow with the potatoes and then the peppers. Cook briskly for a few minutes, stirring the veggies so they all get coated in oil...turn down and cook, stirring at times, until all the veggies look cooked and the stuff is sticking to the base of the pan. In the book it is served with thick wedges of ham. Red wine too of course.
