I'm not a vegetarian, but this features regularly on my menu. . . . It's really quick and easy and impressive.
Serves 4 as a main course
12oz nice button mushrooms
3 good sized cloves of garlic
less than 1/2 pint double cream
12oz - 1lb pasta, penne or swirls are best
salt & pepper
knob of butter
Peel garlic and chop, lightly fry in butter, watch it doesn't burn. In the meantime grate the mushrooms on an ordinary cheese grater, add to the frying garlic turn heat down a bit & keep stirring till the juices start to run out of the mushrooms, simmer gently for a few minutes stirring occasionally. Add the cream, I would use perhaps 3/4s of a half pint pot, stir into the mushrooms and allow to simmer and reduce, season well with salt and pepper. In a big pan bring plenty of salted water to the boil, add the pasta & cook till done, drain, add the reduced mushroom mix & stir well. Dish up and sprinkle with grated parmesan.
