Made a tray this morning, and the greedy pigs (I mean, "my delightful family"), have nearly finished it all!
125g, butter, softened
50g, soft light brown sugar
125g self-raising flour, sifted
125g, icing sugar, sifted
2-3 drops peppermint oil, or essence
125g, plain chocolate
1. Lightly grease a small swiss roll tin,11x7inches. Preheat oven to gas 5,375F,190C
2.In a warm mixing bowl, cream the butter and sugar, then stir in the flour.Press the mixture firmly and evenly into the tin. Bake for about 20mins.Set aside to cool.
3.Put the icing sugar into a small bowl, add the peppermint flavouring.Stir in water, 1 teaspoon at a time, until you have a thick icing.Spread over the top of the shortcake and allow to cool.
4.Melt chocolate, and spread over the peppermint icing, and allow to set. Cut into squares, and watch it disappear.
