1/2pt doublecream
1/2pt single cream
6 oz sugar
4 egg yolks
Beat the egg yolks and sugar together till they are pale yellow ,add lemon juice and rind without pith ,Heat the single cream till it's hot-bath temperature, add the double cream, and beat into the yolk mixture. Custard made.then i freeze stirring to break up cyrstals of ice
