Lemon Pudding
2oz butter
3oz caster sugar
2ozS R flour
grated rind & juice of one lemon
2 eggs - separated
short half pint of milk
Apologies for not being in metric - was from an old fashioned book !
Cream the butter and sugar and lemon together. Beat in the egg yolks. Add sifted flour and milk, gradually. Whisk egg whites until peaky then fold in (in a figure of 8 with the spoon, someone once taught me).
Pour into a greased 2-pint dish.
Bake for 35-40 minutes at around gas 4/350F or 180C.
The mixture separates out so you get a light sponge on top and gooey lemony sauce underneath!

| This sounds great NannyP - simple but I imagine it would taste delicious. I love lemon puddings of any kind so I'm def trying this one. Thanks for posting it! |
