It's a long way off yet, but I have 3 friends coming to stay for a few days.
One is vegetarian (not vegan) and the other's aren't. One of the other's doesn't like cheese, and one doesn't like fish.
I have some veggie dishes, I could have done, but they have cheese in them. I would have done fish but..

Well, youve got the famous curry recipe.........you could make a batch, split that into 3 and put chicken in one, your chestnuts in another and maybe potato & spinach in the third. Add different spices to change each dish - chilli, cardamon pods, star anise
I love eggs florentine - poached eggs on spinach with cheese sauce over, you could make white sauce, if you make the sauce properly with flour and butter it has more body than a cornflour sauce. you could put grated cheese out for sprinkling.
Also lasagne minus cheese. I used to work in a local hotel and they didn't put cheese into the lasagne just a layer of grated on the top - it wasn't noticeable.........so vegetarian lasagne, mushrooms, peppers, onion, tomatoes, garlic. Make in advance and freeze.
When I was skiing I had a veggie and somebody who wasn't keen on wheat,and a muslim so one night I cooked polenta with sausages. Make a spicy tomato sauce with tinned toms, garlic, lots of black pepper, salt and a pinch of sugar, reduced till thick. Garlic mushrooms (or fungi if you have access). So the veggie & muslim had the mushrooms and tom sauce with polenta and the rest had sausage with tom sauce.
That's all for the time being.

Thanks for those....I checked out the curry idea the other day, 2 of them said No and the other is away at the moment. That would have been so easy, we could have all had chick pea and chestnut curry.
Love the lasagna idea with white sauce instead of cheese and of course the cheese can be there for some to add.
Eggs Florentine is something I've never tried, so will give that some thought. I hate poaching eggs, but will try out on me and Mark one day.
Jo had it the other day I think and she was waxing lyrical about them.
My bean burgers will be good too, so I will have plenty of choice. We expect to eat out at least once and they're only here for 4 days...it's good to hear other ideas...thanks  _________________ http://positivechange.myfreeforum.org/index.php

onion or tomato tarte tatin yummy
creamed leeks go great in pancakes or in pastry
how about raclette but use the top of it as a sort of mongolian barbie for shredded veg and then with it you could do a stock type mongolian/chinese stock pot (I use individual choc fondues but before that a communal saucepan) this is great as all you do is prepare the veg and spices etc sprawd them on the table and everyone helps themselves and cooks their own meal at the table |

tarts
tomato (can add roasted skinned peppers as well)
in a skillet place the sliced toms and peppers if you are using in a circular pattern until the plate is covered sprinkle on some chopped garlic drizzle with olive oil and cover with flaky pastry cook gas 7 for about 20 mins or until the pastry is nicely browned
Turn upside down and add chopped basil
onion
gently fry thinly sliced onions in butter and oil until just caramalised (add garlic if you want) put in skillet and pastry on top (mix in thyme if you like it)
double up the amount of onions and make a soup with the rest!!
or you could make a pissaladiere don't add the anchovies if you don't like them but those ones in flavoured oils are lovely
leek
fry thinly slice leeks and shallots or onions in butter until tender and a good slosh of white wine (not necc but lovely taste) cook off and then pour in some cream (enough to make a nice sauce) a bit of thyme either put in a shallow dish and cover with fresh breadcrumbs and grated cheese and bake.
make small tartlets with the mixture.
or put in crepes (you could also cover these with a cheese sauce and bake)
add chopped walnuts for a bit of crunch
If its not for a veggie fry up some lardons in the butter first .
leeks in cheese sauce make a change from cauliflower cheese
Potato and cabbage pie is another favourite of ours (may sound wierd butsa its so tasty)
This one is actually for poached chicken but we often have it just vegetables which you can change according to the seasons.
2 large onions
6 cloves garlic
1 bouquet garni
leeksturnips
swede
carrots
whatever else is in season but for veg that does not take long add just before aioli
a cup of aioli
salt and pepper
gently fry onions in butter and oil add chopped leeks add garlic, all the cubed root veg and the bouquet garni , cover with stock and braise until veg is tender add things like peas etc remove B.G and then slake the aioli with some of the stock whisk it together and then slowly add it to the vegetablesadd chopped chives and parsley and serve ( don't be put off by the sound of this one as its so comforting mopping up the garlicky juices with bread )
