Serves 8-10
INGREDIENTS
sunflower oil for greasing
7 egg whites
175g/6oz/scant 1 cup of caster (superfine) sugar
115g/4oz/1 cup flaked (sliced) almonds, toasted
115g/4oz/1 cup sultanas (golden raisins)
grated rind of 1 lemon
165g/6oz/2 cups plain flour, sifted, plus extra for flouring
75g/3oz/6 tbsp butter, melted
1. Preheat the oven to 180c/350f/Gas 4 and grease and flour a 1kg/2lb loaf tin. Whisk the egg whites until they are very stiff, but not crumbly. Fold in the sugar gradually, then add the almonds, sultanas and lemon rind.
2. Fold the flour and butter into the mixture and tip it into the prepared tin. Bake for about 45 minutes until well risen and pale golden brown colour. Cool for a few minutes in the tin, then turn out and serve warm or cold, in slices. _________________ *Smile and the world smiles with you*
