|
|
This is a Mary Berry recipe.
The first time I made these, they were incredible....just as if I had bought them in M & S  The 2nd time, I don;t think I proved long enough.
| Quote: | 150ml tepid milk
75ml tepid water
60g very soft butter
1 beaten egg
60g caster sugar
1 tsp salt
500 strong white bread flour
1 tsp ground mixed spice (I use quatre epices moulou)
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1 x 7g sachet yeast
Start machine on dough setting then when beep sounds for adding ingredients add:
90g currants (raisins de corinthe)
60 dried mixed peel (I substituted with golden sultanas)
When the dough has risen and you have formed the buns you can make make the cross bit by using strips of shortcrust pastry 'glued' on with water (I didn't bother with this bit)
After you have baked them glaze them by brushing on a mix made by melting 2tbsp of caster sugar into 2 tbsp of water whilst the buns are still hot. |

I am making these today.
I thought I had all the ingredients, and then, realised I hadn't got the sultanas So, I had some very moist prunes, which I chopped up and added, plus a few chopped dates and a few, dry old sultanas
We will see whether they are as good. They are on their first prove in the oven at the moment.

How naughty
My son loves French/Italian butter so I always bring him some back after a trip to the alps. I am generally managing to avoid it.......

| Jamie Oliver has a good ad on tv at the moment. Slice the buns, spread with marmalade, top with custard, and bake in the oven..... |
