I have two current favourites.
One's Rose Elliott's Vegetarian Meals in Minutes (love her pasta with spinach, pine nuts, raisins + nutmeg but leaving out the butter, and her provencal bean soup is yummy - give me time, I'll pass on more recipes...).
Another's Rosemary Conley's Step by Step Low Fat Cookbook - I'm not usually a big fan, but this one's excellent. So far, really recommend lamb steaks with redcurrant jelly and the chicken with coconut and coriander... |

I'm really pleased with a recent RiSi swap. I got 'Healthy Eats' edited by Gina Steer. It's a small but thick book, packed with really tasty quick and easy meals. The Courgette and Tarragon Tortilla is absolutely delicious and it looked like the picture! (but I did pre-parboil the potatoes) ISBN 1844513343
Another favourite is "The Enchanted Broccoli Forest" by Mollie Katzen. This is a big A4 veggie book in a handwriting-style font, with line drawings ISBN 0898150787
