From the allotment and now happily passed on to my 19 year old twins. They have got most herbs and spices in the kitchen but are very lazy - can anyone think of anything to do with the above?

Angel, sorry no one has responded and I am no chef or even cook, just a bottle washer.
If the spuds are biggish ones how about baking them.
While that is doing prepare beans and onions by chopping finely. Mix these with some sour cream or creme fraiche and add a few spices (any you like).
When spuds done take out of skin carefully, mix potato with cream, beans and onions and pack back into the skins. Serve with a light salad.

This by the way is my own concoction straight out of the head so any blame for horrible tasting food could be levelled at me.

Methinks you're a closet chef Dave.

I like dave's suggestion but would open a tin of tuna and add it to get some protein into the meal.
