Very easy-just be careful not to leave in the oven a moment longer than necessary, or the consistency will be more that of a bicuit than a soft cookie.Flavours can also be adapted/varied, to whatever you like- one that goes down well here is mixed peel and chopped nuts. The dough keeps well if you double wrap it in cling film,store in the fridge and use within a week.


175g plain white flour
2.5ml bicarbonate soda
pinch of slat
60g butter
75g granulated sugar
60gsoft brown sugar
2.5mlvanilla essence
1 egg
75g dark chocolate, coarsely grated
75g milk or white choc, coarsely grated


Stir togetherflour, bicarb+salt. Beat the butter, sugars,and vanilla essence together. Add egg and beat well. Gradually add the flour mixture, beating well. Stir in the grated chocolate

Drop rounded teaspoonfuls of the mixture onto an ungreased baking tray. Bake in a pre-heated ovem, 190c/375f, gas 5 for about 7 to 8 minutes, or until lightly brown. They should still be very soft.

Cool slightly(or they will be too soft to move) before removing to rack.
