Special thanks to my online-friend http://profiles.yahoo.com/martionmanswife for sharing this soup-recipe of hers :) Without further ado, here it is, in her own words:

"1 1/2 pound of chopped stew or chuck Steak... chop into bite sizes..

2 large red Potatoes diced , and 2 white potatoes diced.. leave the pealing on em.. is good for you.

1 can of cut green beans. drain em and add em almost last..

4 stalks of celery chopped

2 cups frozen corn

1 cup of Roasted tomato salsa

1 cup of cracked wheat.. bulgar

2 cups of milk

and about 2 quarts of water.

now put some butter in the bottom of a HUGE soup pot and brown the meat .. get a nice crust on it and then add the celery.. and saute it until the celery is bright GREEN,, you could put onion in now if you like.. but well I do not like it in my soup. sauted onion that is .

let the stuff simmer. about 3 minutes ... then take off the heat and add as follows... some of the water,, potato, then green beans.. add the rest of the water to cover the potato and then finish adding the rest of the veggies.. as soon as the broth and veggies are at a boil add the bulgar.. it is a cereal grain and takes a bit to cook up.. .. turn it down to med low.. kind between low and medium.. and simmer it for about an hour,, then add the salsa and the milk,, salt and pepper to taste,, is really HOT and good for you..serve with a dinner roll and a glass of COLD milk.. you got a nice warm and comforting dinnner.

now the reason you add the salsa next to last is because of the vinegar in it.. can spoil the milk...you need to to boil the broth with out those 2 things first and simmer it, then add the salsa and salt and pepper and milk and bring back up to heat.. the salsa gives the soup a nice BITE and well is just good for ya."

Love the sound of this-I can eat soup even in hot weather, so will give it a try soon!
