Not quite as I remebered it Jo, but will print it anway, and you could maybe adapt to use fudge cake!
Ice cream:
4 eggs yolks
4oz caster sugar
15fl oz thick double cream
7fl oz Greek yogurt
1.5 ozs creamed coconut, grated.
Whisk eggs yolks and sugar. Bring cream to simmering point in small saucepan, and add coconut., stirring until it's completely dissolved.. Pour cream mixture onto egg mixture, stirring continuously-it should thicken like light egg custard.Allow to cool slighl;tyly before adding the yogurt. Stir everything and leave to cool, before adding "cake"!!
Stir well again, then place in cotainer, cover with clingfilm and place in freezer, until almost set. (when it has the consistency of soft scoop, which will take up to 7 hours). At this point stir very thoroughly to distribute any ice crystals, then return to freezer overnight.
The icecream will freeze, but remain soft in texture. Because it is so soft, there is no need to remove from the freezer in advance of serving. |

I tried this today, minus the coconut as I couldn't find any... but I put it in the freezer and I just took it out to give it a mix and it's frozen solid!! Haha! Do you think my freezer is too high or I did something wrong?
Oh well it tastes marvellous so I will just have to leave it out to thaw a bit before I eat it. :lol: _________________ Positive Change |

i would say left in freezer too long between stirring and freezer too high-u really are a muppet!!
mind you if it tastes okay who cares???? |

prob the freezer then-if it tastes ok who cares anyway lol
