I made curry tonight and for some reason it tasted as though something was missing... I just can't think what I missed out!

I had:
onion
garlic
curry powder
coconut milk
cumin seeds
cardamon
salt & pepper
courgette/sweet potato

Think I might stick to jars!

Yeah maybe... I don't think I have any of that! I put in a bay leaf too which I forgot to add to my list...

Have to say I love coriander and it is used a lot in curry dishes, perhaps that was the taste you were missing. To be honest I very rarely cook my own curries as they just don't taste the same as the local curry house !

garam marsala,always very nice and brings out flavour but only need a little

cayenne pepper to give it a bit more hotness
