1lb Flour - 50/50 mix of strong and plain
1/2 oz fresh yeast
Scant pint of milk and water mixed
1 tablespoon salt
1 teaspoon sugar
2 tablespoons olive oil
2nd mix
1/2 teaspoon bi-carbonate of soda
1/4 pint water
oil for greasing
Dissolve yeast in liquid, mix dry ingredients, add oil to liquid and mix in a machine with a "K" beater. Beat well. Cover and allow to rise. Knock back add bi-carb to water and add to mix, mix well. Leave for half an hour.
Grease a griddle (or heavy frying pan but it must be level or the batter will run out of the bottom) Grease crumpet rings. Heat to a medium heat. Pour batter into rings. It will take 7 - 10 minutes for the top to set, bubbles will start to form. When the top has set remove rings and flip crumpets over. The bases should be a light golden brown, adjust the heat for the griddle if they are too dark or too light.
