The latest from my online-friend http://profiles.yahoo.com/martionmanswife :) Again, in her own words:

"ok, I plant 2 to 3 huge tomato plant a year. There are lots of tomatoes in August and Sept. So I make HOME MADE TOMATO BISQUE soup.

this is what you need:

a strainer, one with a handle, the kind that you use for soups or apple sauce. ASK at Sears or FRED MEYER or at any speciality store.

3 large sauce pans.. I know is messy but is good an you can freeze it.

about 10 cut up tomatoes, hey your growing em they is cheap. IE FREE and will rot if you do not use.
1/4 of a HUBBARD squash pealed and diced.
1 pint of Cream
4 tablespoons of butter or Gold n Soft
1 chopped shallot
6 pieces of crisp bacon diced

in separate pans , put the tomatoes with enough water to cover and bring to boil for about 5 minutes remove from heat and let cool a bit.

in second pan put the squash , cover with water and salt bring to boil , like potatoes, boil until soft enough to mash. drain and set aside.

strain the tomatoe through the apple sauce mill, this removes the seeds and peal from the tomato sauce... then Mash the squash like potatoes, add butter and some cream.. then into the 3rd pan, add the tomato and squash, add the shallot and bacon to the mix. Add the cream until the mixture is thin enough to be soup. If you run out of cream, use some milk until you get it soupy. bring to a steam and serve with toasted cheese sammies.. you got nummy fall soup.

now what dose this cost...?

IF you plant your tomato now in August you have lots of nice tomato.. ONE hubbard plant will grow about 6 to 10 squash and they are HUGE. all in all you are gonna spend about 10 bucks on 2 plants that you can make this with. AND you can freeze mashed squash in freezer bags.

YOU can use Hubbard squash like pumkin in pie. And there are less carbs in a hubbard than a potato. also this soup has less than 100 calories per serving.

here is what I plan to plant here with the next check
1 more patty pan squash
2 more tomatoe
2 cuke, one green , one lemon

all types of squash can be frozen. zuchinni can be chopped and frozen raw and used as needed in stir fry. I chop up celery when it is cheap and freeze it. Same with Asparagus. just clean it up and freeze in freezer bags.. YOU SAVE ALOT OF MONEY THAT WAY. you can also do this with mushrooms.

anyway.. come august I will be freezing veggies.. so have fun see ya agian.. and see the other soup reciepe on my page... LOL
HUG
Donna"
