This is a fat-free fruit filled cake!
Ingredients
375g of mixed dried fruit
450g of tinned apricots that you puree, juice and all (I used Bonne Maman Apricot Compote 390g instead)
125g of self raising flour
Soak the dried fruit in the apricot mush overnight in a covered container in the fridge.
Next day, mix in the flour.
Put it all in a 25cm loaf tin and bake fir 1-1 1/2 hours at about 180C.
