1lb Rhubarb
1 sugar free Raspberry Jelly

My mother used to make this when I was a child, but using an ordinary jelly. Using the sugar free type makes it near enough calorie free.

Gently simmer the rhubarb till it's a mush in just enough water to prevent it from burning, cool somewhat, sprinkle the jelly powder over, warm enough to dissolve the jelly. Pour into a nice bowl and allow to set.

You can up the calories by serving with cream, or stick to the diet and serve it on it's own or compromise and use a low fat natural yoghurt.
